Square Cookies!

I finally got round to baking some ‘Īd treats this morning. Kinda went a bit wonky in my haste. At least they taste better than they look, māshā’Allāh! Same recipe as here, but this time I used dark chocolate.

Choc Chip N’ Walnut Cookies

I know you might be getting bored of these cookie posts, but this recipe turned out quite nice, māshā’Allāh, so I thought I'd share (it has nothing to do with scoring extra 'rishta' points, by proving that I am not allergic to the kitchen. No, no, no… ahem).

Sorry about the dodgy photo. My camera doesn't do very well in low light conditions, and I detest using the flash! Anyhoo, recipe and instructions below.

  • 125g butter, unsalted
  • 1/2 tsp vanilla, alcohol-free
  • 100g granulated white sugar
  • 100g demerara sugar
  • 1 medium egg
  • 250g self-raising flour
  • 60g walnuts, chopped
  • 120g Cadbury's Large Buttons, chopped (this is the chocolate that we already had in the house, hehe – use whatever brand you wish)

Beat the butter, vanilla, and sugars together with an electric whisk until smooth, before mixing in the egg (both white + yolk). Add sifted flour, and remaining ingredients. Stir until thoroughly mixed. Spoon the dough onto a baking tray lined with baking paper, making sure to leave enough space between the lumps, as they do spread out. Bake at 200oC for around 13-15 minutes, or until sufficiently browned.

Results: I ended up with 24 medium-sized cookies, māshā’Allāh. My dad liked them, which I take to be a sign of a successful baking session, alhamdulillah – trust me, he's a harsh critic, and doesn't have a sweet tooth like me and mum – so I'm satisfied. :)

Stress is not normally a condition that people appreciate. These days, however, i find that i am missing it a lot. That is because thanks to the trauma of my thesis, and certain other personal issues, i have lost about 5 kgs over the past two months, without much effort – māshā’Allāh.

But now that i am relatively relaxed and happy, alhamdulillah, my appetite has returned with a vengeance – together with one of those lost kilos! {sad face}


Definition of Hyprocrisy

Another example of how life can be defined by stories involving chocolate; maybe i'll make it a running theme. It's just another excuse to eat chocolate, really. LIKE I NEED ONE.

When you tell your parents off for having double, extra-thick, artery-hardening, cream, with sugar, and toast, for their breakfast, but you have no qualms about eating toast topped with a one-inch thick layer of luxury chocolate spread, for your own breakfast. Hmm.

By the way… it does taste as good as it looks. No – better.

When your boss kindly brings in a box of the finest, dark, Belgian chocolates for his lab group, forgetting that one particular member, who happens to be a notorious chocoholic, (i.e., me) cannot eat anything that contains alcohol (i.e, said chocolates).
